This type of diagram showing the remains of an animal’s skeleton allows us to see the level of preservation of faunal remains. When remains are well preserved, it is then possible to understand the society’s food economy in relation to the animal, from its hunting to the handling of carcasses (butchering). In this collection of the remains of three horses, the vertebral column is missing, perhaps left where the animals were hunted once the more nutritional parts of the animal, like its legs, had been removed, to be brought to Étiolles and discarded on site.
